Ingredients
- 1 can chickpeas (drained)
- 1/4 cup Greek yogurt
- 1 tbsp tahini
- 1 tsp smoked paprika
- 4 slices whole wheat bread
- 1 cup arugula
- 1/2 cup jarred roasted red peppers
Directions
- Roughly mash chickpeas with fork
- Mix yogurt, tahini, paprika and lemon juice
- Toast bread until golden
- Layer arugula and peppers on bread
- Spread chickpea mixture and assemble
