Ingredients
- 1 zucchini (sliced)
- 1 red onion (wedged)
- 1 cup cherry tomatoes
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/4 cup feta cheese
- 2 tbsp balsamic glaze
Directions
- Toss veggies with oil and oregano
- Roast at 220℃ for 15 minutes
- Crumble feta over top
- Drizzle with balsamic
