Ingredients
- 1 medium sweet potato (400g)
- 100g smoked salmon
- ½ avocado
- 2 tbsp Greek yogurt
- 1 tsp capers
- ½ lemon
- 1 tsp dill
Directions
- Slice sweet potato lengthwise into 1cm thick planks
- Toast in air fryer at 200°C for 12 minutes (or oven-bake)
- Mash avocado with lemon juice and black pepper
- Spread avocado mixture on sweet potato toasts
- Layer smoked salmon slices
- Dollop yogurt, garnish with capers and dill
