- 8 pre-baked falafel balls
- 1 cup cooked quinoa
- 1 cup cherry tomatoes (halved)
- 1/2 cup diced cucumber
- 2 tbsp tahini
- 1/4 cup pickled red onions
- 1 tsp sumac
Directions
- Reheat falafel in oven
- Toss quinoa with vegetables and sumac
- Drizzle tahini over bowl
- Top with falafel and onions
