Ingredients
- 4 large eggs
- 100g fresh spinach
- 60g crumbled feta
- 8 cherry tomatoes
- 1 tbsp olive oil
- ¼ tsp grated nutmeg
- 1 garlic clove
Directions
- Whisk eggs with pinch of salt until frothy
- Heat oil in non-stick pan, sauté minced garlic 30 seconds
- Add spinach and cook until wilted, season with nutmeg
- Pour eggs over greens, tilt pan to form even layer
- When edges set, sprinkle feta and halved tomatoes
- Gently roll omelette from one side using spatula
- Cook 1 minute per side until golden
