Ingredients
- 4 small corn tortillas
- 1 cup cooked black beans
- 2 eggs
- ¼ red onion
- 3 radishes
- 1 tsp cumin
- 1 lime
- 2 tbsp cilantro
Directions
- Soft-boil eggs: 6½ minutes in boiling water, then ice bath
- Thinly slice onion and radish, marinate in lime juice
- Mash beans with cumin and 2 tbsp bean liquid
- Warm tortillas in dry skillet 30 seconds per side
- Spread bean mixture, top with peeled eggs
- Add pickled veggies and cilantro
